Directions
A falafel Recipe that celebrates modern fusion, innovation and experimentalism, all done tastefully so as not to disrespect the heritage and very essence of what a falafel is. The Bean content is inspired by Mama Mona’s unifying blend of Fava Beans and Chickpeas in equal measure, but the supporting green and herbs are on the alternative side, choosing to use Shallot instead of Onion (for that sweeter, gentler flavour), Spring Onion Green remain as the pivot, Curled Parsley instead of Flat leaf (for that gentler taste) whilst Garlic and Chives share that garlicy content. Added to this for a keynote flavour is fresh Mint, taking the overall taste to somewhere fresh and zesty. A breakfast snack perhaps. Once you’ve cooked it, dip it in a tzatziki sauce, combine it with some Feta cheese take a bite and you might be flirting with Greek Mythology.
